Demitasse Cups
Does anyone else prepare their espresso like this?
I used to add my sugar after brewing my espresso, but after reading about “Cuban style” espresso, which puts sugar in the brew cup so the coffee is sweetened as its brewed, I’ve been making it that way ever since. I put two demitasse spoonfuls in first, then add the coffee, tamp firmly, and then let the magic happen. Occasionally I’ll add spices like cinnamon or cardamom and cloves to the grounds, and it goes GREAT with a biscotti! I’ve also started mixing different espresso blends, and I like experimenting with different flavors. Regular coffee is so boring!
Thats really similar to Brazilian style “cafezinho”.
I do like that style as well, but normaly I just drink black coffee.
You should try this as well:
1. warm up the demitasse
2. while still warm, rub the demtasse with orange zest (or any other fruit, mango peal is quite good as well)
3. brew your coffee
4. have a sip and enjoy the aroma.
This is good when you want to enjoy a mix of the fruit and the coffee’s natural aroma, without changing the espresso flavor with sugar or any other additive.
